This Easter bunny cake recipe is so simple to make! I found the inspiration for this cake on Pinterest of course, where else. It was a beautiful round three-layer cake, here is the inspiration. However, the first time I made this I was spending Easter with my family helping my Aunt move out of her place. We weren’t going to have any fancy dinner, just ham sandwiches for lunch on her porch sitting on folding chairs and boxes. I wanted to bring a festive Easter dessert, but it had to be easy to transport and not get in the way. A three-layer cake just wasn’t going to work, but a cake in a 9 x 13″ pan with a lid would be great. So after seeing this bunny cake on Pinterest, I knew it would still be fun and festive in a 9 x 13″ pan.
I made this Easter bunny cake even simpler by using a cake mix instead of making it from scratch. The only thing I will never cheat on making is the frosting. In my opinion, canned store-bought frosting does not even compare to homemade buttercream frosting. The frosting just has to be homemade.

The decorating is also really simple and doesn’t require any skill. This would be fun for kids to help out with. The one trick is just to make sure all the decorations are attached to the frosting so nothing rolls off.
The edible grass I cut into smaller pieces because the long strings just don’t work well. One thing to know about edible grass if you haven’t used it before, it is not really the best tasting. The edible grass I bought was green apple-flavored with banana-flavored bunnies (I didn’t use the bunnies). When everyone was eating the cake most everyone pulled off the excess grass and left it on their plates. It doesn’t taste bad but it’s not great and the texture is a little weird on the cake. I think it is definitely worth using for the aesthetics but I just told my family it wasn’t going to hurt my feelings if they didn’t eat it.
Another option would be to substitute the edible grass with green-dyed shredded coconut. I haven’t tried it yet myself, but I am sure it would taste a lot better than the edible grass does.
- 1 - 15.25 oz box of cake mix in flavor of your choice
- 2 - 1 oz packages of edible grass
- 1 - 18 oz bag of malted eggs
- 1 - chocolate bunny
- 1/2 cup butter (room temp)*
- 1/2 cup shortening
- 4 cups powdered sugar
- 1 tsp vanilla extract
- 2 tbsp milk
- Use the box instructions to bake the cake, in the cake pan you prefer. I used a 9 x 13" pan. Let cool completely.
- In medium bowl beat together the butter and shortening, either by hand or for a smoother and fluffy frosting use an electric mixer. Mix in the vanilla. Then one cup at time add in powdered sugar, making sure the last cup in mixed in well before the next cup goes in. Gradually add in the milk until you get right consistency, you may need a little less or little more than 2 tbsp.
- Frost the cake, no need for perfection, the decorations are going hide anything. Place the chocolate bunny, make sure to press gently into the frosting so it is held into place. Cut the edible grass down into smaller pieces, about 1". Sprinkle the grass, everywhere covering up all the frosting. Then place the malted eggs randomly throughout the grass, moving the grass aside a little so the eggs stick to the frosting.
- *Butter: if you forget to leave out before hand like I do, put it in the microwave for about 15 seconds to soften, but not melt.
