This Red White & Blue Brownie Berry Pizza is a great recipe for a patriotic holiday like 4th of July or Memorial Day. It is chocolate, fruit and frosting, so you really can’t go wrong making this dessert anytime strawberries and blueberries are in season. I know you can get berries anytime of the year now but my thing is if you can’t smell the strawberries before you even spot them in the grocery store or farmers market then they aren’t worth buying. This is one of those recipes that really requires fresh strawberries and blueberries.
Supplies Needed:
(beyond the normal mixing bowls, measuring cups, wooden spoons & spatulas)
- 12 inch solid pizza pan
- parchment paper
- pastry brush ***optional
Since this is a pizza the easiest thing to use to bake the brownie is a pizza pan. Obviously needs to be one with out holes so the brownie batter doesn’t run through and it really helpful it has little lip to it on the edge. If you plan to pull the brownie off the pizza pan and serve on another platter, I suggest lining the pan with parchment paper. It makes it super simple to pop out of the pan and peel back the paper.
Cut off a sheet of parchment larger than the pan, press and crease it into the perimeter of pan. Using the crease cut out a perfect fit liner for your pan.

If you are not a fan of cream cheese frosting a buttercream frosting would replace it nicely.
- 1 box brownie mix
- Butter or oil (as called for on brownie mix)
- Eggs (as called for on brownie mix)
- 1 package (8 oz) cream cheese, softened
- 1/3 cup sugar
- 1/2 teaspoon vanilla
- 2 cups sliced fresh strawberries
- 1 cup fresh blueberries
- ***OPTIONAL: 1/2 cup apple, apricot, or peach jelly (any jelly that is light in color will work) Gives the fruit a nice sheen.
- Preheat oven to 350°F. Line 12-inch pizza pan with parchment paper.
- In large bowl, stir brownie mix, butter/oil and eggs until well blended. Spread in pan.
- Bake 18 to 20 minutes or until toothpick inserted 2 inches from side of pan comes out clean or almost clean. Cool completely, about 1 hour.
- In small bowl, beat cream cheese, sugar and vanilla with electric mixer on medium speed until smooth.
- Best to wait as close to serving as possible. Spread frosting evenly over brownie base. Arrange berries over frosting. If you using the jelly to add sheen to the fruit, stir jelly until smooth, if it has been in the refrigerator, it may help to warm it up slightly for a few seconds in the microwave. The gently brush over the berries. Serve immediately or refrigerate up to an 1 hour. The longer it sits the more time the berries have to run into the frosting. It still tastes good but the sooner your serve the prettier it is. Store covered in the refrigerator.
- You can substitute the cream cheese frosting for another frosting like buttercream.
